Lessons learned

So, what have I learned from this week's Labelling Crisis? What I knew all the time, really - Chef is right, I am wrong.

For example. Yesterday, I pointed out to the S-C that the individual pots of fromage blanc he told me not to send out the day before, have an expiry date of the 22nd.

Easy, he says. Scoop them all out (there are 144 of them), put the contents in a bucket, mix it with sugar and send it out as a pudding on Monday to the client who complained so much on Tuesday.

Is he mad or is this good food science? I have lost the ability to care, and spend a happy half hour building up my individual pot-opening skills.
